Sweet Potato Falafels
For less than a pound a serving, pitas bursting with homemade
falafels and lettuce offer a light supper and a great energy boost!
Ingredients:
Preparation: 1 hour 20 mins
1 large or 2 tiny sweet potatoes, total weight 700g/1lb 9oz
1 tsp cumin powder
2 chopped garlic cloves
2 tsp coriander powder 1 handful coriander leaves, chopped coriander juice 12 lemons
100g flour (plain or gramme)
1 tablespoon extra virgin olive oil
4 pita breads (wholegrain)
4 tbsp hummus (low-fat)
STEP 1
Preheat the oven to 200 degrees Fahrenheit/180 degrees Fahrenheit fan/gas 6.
STEP 2
Microwave sweet potatoes whole in the microwave for 8-10 minutes, or until cooked. Allow to cool
slightly before peeling.
STEP 3
In a large mixing bowl, combine the potato, cumin, garlic, ground and fresh coriander, lemon
juice, and flour. Season with salt and pepper, then mash until smooth.
STEP 4
Form the mixture into 20 balls with a tablespoon. Place on an oiled baking sheet and bake for 15
minutes, or until golden brown on the bottoms, then turn and bake for another 15 minutes, or
until brown all over.
