Chicken Satay Strips
When you're hungry, keep these nutty chicken satay strips in the
fridge for a healthy
alternative! Cucumber and sweet chilli sauce accompany this mouth watering snack.
Ingredients:
Preparation: 25 mins
2 tbsp of peanut butter
1 finely grated garlic clove
1 teaspoon of curry powder
a few dashes of soy sauce
2 tablespoons lime juice
2 chicken breast fillets, skinless (about 300g) 10cm cucumber, cut into thick strips

STEP 1
Preheat the oven to 200°C/180°C fan/gas 4 and grease a baking tray.
STEP 2
In a bowl, combine 2 tablespoons chunky peanut butter, 1 finely grated garlic clove, 1 teaspoon
curry powder, a few dashes of soy sauce, and 2 tablespoons lime juice.
STEP 3
Mix in 2 skinless chicken breast fillets that have been sliced into strips. Arrange on a baking
pan, spacing them out, and bake for 8-10 minutes, or until cooked but still juicy.
STEP 4
Serve heated with sweet chilli sauce and a 10cm cucumber cut into fingers.
